Quinoa is a mountain plant with a high content of proteins, mineral substances and fatty acids. It is easy to digest and is gluten-free. Quinoa is very rich in minerals such as copper, iron, phosphorous, magnesium, manganese, zinc, calcium (containing more than milk) and potassium. It also contains a balanced combination of nine basic essential amino acids (cysteine, phenylalanine, histidine, isoleucine, lysine, methionine, tyrosine, threonine and valine) that the human body is unable to produce itself. These must be taken in through food. Quinoa is also a source of vitamins that are soluble in water (group B vitamins, vitamin C), vitamins A and E (alpha tocopherol), thiamine (vitamin B1), riboflavin (vitamin B2), folic acid, beta-carotene (provitamin A) and fibre.
